Pumpkin Spice Bread and Muffins

This recipe makes two loaves or one loaf and 12 muffins.

Ingredients:
1 1/3 cup whole wheat flour
1 cup white flour

1 tbsp baking powder
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1.5 tsp nutmeg

2 tsp ground allspice
1/4 tsp chinese five spice (optional)
1 cup granulated sugar

1 cup brown sugar
1 tsp vanilla
1/2 cup canola oil
1/2 cup vanilla soy milk (or regular milk)
4 eggs
2/3 cup water
1 (15-ounce) can pumpkin
chopped pecans


Directions

Preheat oven to 350°.
Combine flours, baking powder, baking soda, salt and spices in a bowl. In a separate bowl beat together sugar, eggs, oil, milk and vanilla. Beat in water and pumpkin. Add flour mixture to pumpkin mixture, beating at low speed just until combined. Pour batter into greased bread pan and muffin tins. Sprinkle chopped pecans on top of batter. Bake bread at 350° for about 1 hour or until a wooden pick inserted in center comes out clean. Bake muffins for about 20 minutes or until tooth pick inserted in center comes out clean.
